Valencay Ash-covered goat cheese is a soft-ripened, surface-ripened cheese made from goat's milk. It has a greyish, moldy rind and a creamy texture with small crunchy bits of goat's milk caramel. The flavor is delicate, fruity and slightly spicy with a long finish.
