Provolone del Monaco DOP is a rich, semi- hard Italian cheese from Campania, made from raw cow's milk (with Agerolese cows milk) and ages caves, giving it a buttery, tangy, and slightly spicy flavor with a compact, golden interior and characteristic small holes, named for the monk-like cloaks used for protection during its traditional production and aging process.
